Gluten free chocolate fudge cake recipe

So, to make a change from trying all this ready made supermarket stuff that frankly is very expensive and doesn’t cut the mustard. I recommend you give my chocolate fudge cake a whirl!

200g/ 7oz dark chocolate, broken up

200g/ 7oz butter/ cooking marg

200g/ 7oz light brown muscovado sugar

100ml/ 3 1/2fl oz soured cream

2 large eggs, beaten

200g/ 7oz gluten free self raising flour (I use Dove’s Farm)

5 tbsp cocoa

sweets/ cake decorations to finish

For the icing:

100g/ 4oz milk or dark chocolate

170g condensed milk (I used 1/2 a can and froze the spare)

100g/ 4oz butter/ cooking marg

1) Pre-heat oven to 160 degrees C/ gas mark 3

2) Line a 22cm square cake tin with baking parchment

3) Melt the butter, sugar and chocolate together in a pan with 100ml hot water, until blended

4) Set aside for a few minutes to cool and then stir in the sour cream and eggs

5) Whisk the flour and cocoa in, until lump free

6) Pour into tin and bake for 50-55 mins, or until a skewer comes out cleanly

7) To make the icing, melt the icing ingredients in a bowl above a pan of gently simmering water

8) Cool until it becomes firmer, but spreadable and ice cake

9) Scatter with decorations/ sweets

10) Best enjoyed warm, microwave a slice for around 30 secs. I bet this is better than anything else you’ve tasted in a while!
