Gluten-free Reese’s Piece’s Cookies

14 Nov

I can’t tell you how good these are! You just have to try them for yourself. Reese’s products are widely available in the UK. I usually get them from Tesco or Sainsbury’s when they’re on offer. You can also get them from specialist American food stores, but you’ll pay at least 30p more per bag. These won’t be around for long- delicious warm from the oven. Enjoy ūüôā

  • 1/2¬†cup soft margarine
  • 1/2¬†cup granulated sugar
  • 1/2¬†cup packed light brown soft sugar
  • 1/2¬†cup Peanut Butter
  • 1¬† egg
  • 1/2¬†teaspoon vanilla extract
  • 1¬†cup Dove’s Farm gluten-free plain flour
  • 1/2 teaspoon Xanthan gum
  • 1/2¬†teaspoon baking soda
  • 1/4¬†teaspoon salt
  • 1/4 cup milk
  • 3 packets REESE’S PIECES

  1.  Heat oven to Gas Mark 4/ 180 C.
  2.  Beat butter, granulated sugar, brown sugar, peanut butter, egg and vanilla in large bowl until fluffy. Stir together flour, baking soda, Xanthan gum and salt; gradually add to butter mixture, beating until well blended.
  3. Add 1/4 cup milk.
  4. Stir in candies. Drop by heaping teaspoons onto cookie sheet. I line mine with bake and glide silicone paper to guarantee no sticking!
  5.  Bake 10 to 15 minutes or until edges are lightly browned; remove from oven. Cool slightly; remove from pan to wire rack. Cool completely. About 2-1/2 dozen cookies.
