Store Cupboard Sausage Casserole

Firstly I would like to say a big hello and welcome to all my new followers! I’m really chuffed you’ve decided to read my blog and I hope you enjoy re-creating the recipes. I want everyone to enjoy good quality gluten-free food, so please post your comments and pics, once you’ve tried the recipes.

This is a handy recipe, using lots of store cupboard essentials. You can add or take away ingredients according to what you have- we didn’t have any celery in this week, so I just left it out.

Sausage and Bean Casserole

Serves 4

Ingredients

1x 400g can chopped tomatoes

1x 400g can butter beans

1x 400g can baked beans

8 gluten-free sausages

1tbsp vegetable oil

2 carrots, chopped (I cut mine into quarters and then chopped)

2 celery sticks, chopped

1 onion, chopped

1 tbsp tomato puree

1 tsp dried thyme

200ml/ 7fl oz gluten free stock ( I use Marigold Boullion)

1. Pre-heat oven to Gas Mark 6/ 180C. Heat the oil in a large frying pan or wok and saute the vegetables (carrots, celery and onion) for about 10 mins

2. Grill the sausages until browned

3. Combine the stock, butter beans, baked beans, tomatoes, thyme and tomato puree and stir together to mix briefly

4. Put everything into a large casserole dish and cook for 45 minutes until bubbling

Serve with potatoes and veg
