Amazing gluten-free English muffins

Continuing to test out recipes from Annalise G. Roberts book. Well, I have to say I have finally come across a gem of a recipe. Her muffins are to die for!

I made double her recipe and made giant muffins, as the previous ones had been too small. The taste and texture is fantastic. They are so moreish, I’m probably going to put on weight as I’m going to have one every day.

Out of interest, I’m going to try making them with a Dove’s Farm flour mix, to see if it’s really necessary to buy all the different specialist flours she uses or if I can make do. Dove’s Farm is MUCH cheaper you see! If that works out, I see no reason why I can’t post the recipe on here for you. In the meantime, I think that recipe alone makes the book worth it. I still have a whole section on cakes to try, but I’m still eating Christmas cake, so that’s going to have to wait.
