Gluten-free Fish Pie

17 Feb

Well, my husband and I were both sick and in need of some good old-fashioned comfort food. So, I thought I’d make up a fish pie recipe. It was a bit of a team effort, as this is slightly time consuming and took about an hour to prepare. But it was so totally worth it!

6-7 large potatoes

knob of butter

splash of milk salt and pepper to season

Handful mature cheddar cheese

2 white fish fillets

2 salmon fillets

1 cup peas

4 rolls frozen spinach

Handful mature cheddar cheese

1 pint milk

2oz gluten free plain flour (I used Dove’s Farm)

20z margaine

salt and pepper to season

You will need a large, lasagne sized open dish to cook this in

  1. Peel the potatoes and chop into smallish chunks. Boil the potatoes for 20 mins
  2. Cook the fish in the microwave according to pack instructions (approx 6 mins on full power for 4 fillets)
  3. Boil the spinach and peas for 10 mins
  4. Make the white sauce; first melt the margarine then whisk in the flour and cook over a low heat for 2 mins. Gradually add the milk, whisking all the time to ensure no lumps and bring to the boil so it thickens. Season with salt and pepper and stir in the cheese until melted
  5. Mash the potatoes, season with salt and pepper, add the knob of butter and splash of milk until they are creamy and spreadable
  6. Break up the fish fillets and mix with the peas, spinach and white sauce- pour into the bottom of your dish
  7. Top with the mashed potato. If you like you can drag a fork across the top so it goes really crispy and sprinkle with the handful of cheddar cheese
  8. Put into a pre-heated oven at Gas Mark 6 for 30 mins. Serve on its own or with additional veg.

This really is super-delicious and is perfect for all ages.OLYMPUS DIGITAL CAMERA
