Gluten-free Chocolate Fudge Brownie Pie

How’s about this for a Bank Holiday treat? I can honestly say this is one of the best puddings I’ve ever eaten. I do hope that you’ll try it!


Serves 8-12 (generously)


Prep time about an hour



175g/ 6oz gluten-free plain flour( I used Dove’s)

85g/ 3oz butter or hard marg (I used Stork)

2 tbsp icing sugar

1 tsp cinnamon

1 tsp Xanthan Gum

Approx 6 tbsp cold water


3 large eggs

300g/ 11oz light brown soft sugar

1 tsp vanilla extract

175g/ 6oz butter/ hard marg (I used Stork)- melted

50g/ 2oz gluten-free plain flour (I used Dove’s)

100g/ 4oz plain chocolate, broken into squares



  1. Sieve the flour, icing sugar and cinnamon into a large bowl. Chop in the butter (must be chilled). Rub in the fat to the flour, or use a pastry blender. Then add the water slowly, a tablespoon at a time, until the pastry comes together and forms a ball. You may not need it all.
  2. Wrap the pastry in clingfilm and chill for at least 20 minutes, or overnight if you want to make this in stages
  3. Pre-heat the oven to 180C/ Gas Mark 4
  4. Roll out the pastry on a lightly floured surface and line a deep approx 23cm tart tin. Be careful as gluten-free pastry is notoriously fragile! Lift the pastry gently and ease it into the corners. Trim the edges if desired.
  5. Line with baking paper and fill with baking beans. Bake for 15 mins, then remove the beans and paper and return to the oven for 5 more mins to crisp up the base.
  6. Beat the eggs & sugar together with a whisk until they are mousse-like in texture. Stir in the vanilla extract and melted butter.
  7. Fold in the flour & cocoa with a spatula.
  8. Place the chocolate squares on the bottom of the flan case and pour the filling on top.
  9. Bake for 30-50mins, until firm with a slight wobble. (You can trim the excess pastry at this point if desired).
  10. Serve with ice cream or cream.
  11. To freeze, cool and wrap.
  12. To defrost, unwrap and thaw.
