Gluten-Free White Chocolate & Peanut Butter Cookies

I seem to post nothing but sweet treats- I do eat a lot of them!;) This is a super-speedy and tasty recipe.

Takes about 10 mins

Cooks in 10-12 mins!

This recipe can easily be doubled and half put into the freezer.

Ingredients

  • 100g/ 4oz unsalted butter
  • 100g/ 4oz peanut butter (smooth or crunchy depending on your preference)
  • 50g/ 2oz demerara sugar
  • 50g/ 2oz caster sugar
  • 1 large egg
  • 100g/ 4oz gluten-free plain flour
  • 1 tsp Xanthan Gum
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 50g/ 20z white chocolate chips or hand-cut chunks (depending on your preference)
  • 50g/ 2 oz Reese’s peanut butter chips (optional) I get these in a local American grocery store

Method

  1. Preheat oven to 180 degrees C/ 160 degrees C fan/ Gas Mark 4
  2. Line 2 baking trays with non-stick paper
  3. Mix peanut butter, softened butter and sugars together until pale and fluffy (moderate speed, for a couple of mins)
  4. Add the 2 eggs and mix again until fully incorporated
  5. Fold in the sieved flour, Xanthan Gum, baking powder and bicarbonate of soda
  6. Add the chocolate and peanut butter chips and mix until evenly distributed
  7. Spoon dollops onto your baking trays or use an ice cream scoop. Try to keep them well spread out, as they will spread quite a bit
  8. Bake for 10 mins or until golden. After 5 mins baking, take your tray out and drop it on a surface (cover with a towel to protect it) and this will keep your cookies gooey, as it removes any trapped air
