The Best Ever Gluten Free Chocolate Fudge Cake!

If you love moist, rich chocolate fudge cake as much as I do, then you simply HAVE to try this recipe! Once again, I was too busy eating the cake to remember to photograph it! So my photos are never going to win any foodie awards- ha!IMG_3350

Cake

  • 50g sieved cocoa powder
  • 12 tbsp boiling water
  • 3 eggs
  • 50 ml milk
  • 175g gluten-free self-raising flour
  • 1 tsp gluten free baking powder
  • 100g soft, unsalted butter
  • 275g caster sugar

 

Topping and filling

  • 150g plain chocolate
  • 150ml double cream

 

Method

  1. Pre-heat your own to to 160 C (Fan) / Gas Mark 4
  2. Grease and line 2 sandwich tins
  3. Blend the cocoa and water together in a mug
  4. Put all the ingredients into your mixing bowl and beat for a few minutes, until it becomes a thick batter
  5. Divide equally between the tins and bake for 25-30 mins, until a skewer comes out clean
  6. Cool on a wire rack
  7. To make the topping/filling- put  a heat proof bowl over a pan of boiling water and put the cream and broken up chocolate into it. Stir until melted and combined
  8. Remove from the heat and leave to cool until it is on the point of setting
  9. Then sandwich your 2 cakes together with some of the icing and ice the top of your cake. Smooth it over with a palette knife to get a really glossy, decadent finish
  10. Ideal served with strawberries or raspberries, this cake is not too sweet. But it must be stored in the fridge due to the cream in the icing. I’d recommend if it doesn’t all get eaten in the first sitting, that you microwave it to warm it up before serving
