3 Ingredient Gluten-Free Peanut Butter Cookies!

These are fab! I defy you not to try them because they are so quick and easy- unless you are allergic to peanuts of course! This is an American recipe and so you will need a set of measuring cups in order to make it, these are easily and cheaply available. If you are dubious as to whether this will work ( as I was), let me reassure you that the peanuts act like flour, in the same way that you can use ground almonds in a gluten free cake, instead of flour. They also provide the oil. These are no exactly healthy because of the sugar, but as they largely consist of egg and peanuts- they must be high in protein! (But I am not a trained dietician, so don’t quote me on that!)



  1. 1 cup peanut butter (I prefer smooth)
  2. 1 cup sugar (I used granulated)
  3. 1 egg


  1. Pre-heat your oven to 180 degrees C
  2. Combine the 3 ingredients in a bowl, I used my Kenwood mixer as you do need to mix them for while to get them to fully combine. The dough will become stiff and shapeable.
  3. Use your hands to press into circles, about the size of the bottom of a mug and place on a baking sheet lined with non-stick paper
  4. Press them down with a fork to create a pretty, criss-cross pattern on top.
  5. Bake in the oven for 10 minutes, or until golden brown
  6. Cool on a wire rack
